saving money on cheaper cuts of meat

Post by JRobinson »

in the thread congratulating Billings on how good they are, someone suggested buying a cheaper cut of meat, and then cooking it for 6 hours.

Given that I'd normally only get joints that require cooking for a couple of hours - would I actually be saving money?

If you used your oven for other things at the same time, then yes I think you would. I bake bread in batches. I would probably have apples or a rice pudding baking on one shelf, with a casserole or a joint in an enamel lidded cooker on another shelf. And they'd be quite big, so they'd do me for several days. If I'm doing that with a joint, then I always put the veggies in the lidded enamel roaster about an hour after the meat has started to cook, so less fuss and much less washing up! Roasted onions are good too.

All of which makes tonight's cold salt beef (yesterday's leftovers from when it was hot and really, really nice!) seem a bit of a downer.
