I work in branding (clients include Starbucks), a few pointers are: Think about how you want people to perceive you, what you do and how you look are far more important than your name. Names are a bit like Pasta, they aren't much on their own untill you put some sauce with them.
Pizza express without the graphics and buldings they inhabit would sound like any other pizza delivery firm for instance.
Find out what people like, ask the right questions, after you open ask people what they think, what they would like and for their ideas, involve them in the future of the place, make it feel like it is thier coffee shop and you wont go far wrong.
Please stat away from plastic illuminated signs and keep your branding SIMPLE..dont try too hard.
